Late Summer Bean Tacos Recipe

This is an infinitely customizable, easy taco recipe perfect for weeknights. I make it frequently for my fiancé and also use it to clean out the produce drawer in my fridge. If you don’t have black beans, pintos or kidney beans will make a good substitute. I’ve made this recipe with squash instead of peppers or tomatoes instead of corn. These tacos may not be authentic, but they taste great and come together in less than 30 minutes, which definitely makes them a winner in our house.
